Charging speed is controlled via the charger on the car. The connector between the AC and your car is merely a conduit for the electricity. The car can only accept the max the onboard charger is able to convert.

This is something that has changed recently this is not a driving habit. If it were 2 minutes after unplugging the SOC at the destination wouldn't have jumped 12%.

The 72 amp charger was an option on earlier X's (I have one) but it only works on the older wall connector the gen 3 wall connector only supports 48amp charging (60 amp breaker). So even if you get the higher amp charger you most likely won't be able to take advantage of it unless you are able...

If you have the room one of the least complicated ways to upgrade your service is to put a new 200amp load center in and then sub your old 100amp main off of it, making the new 200amp panel the main and then adding new circuits to the 200 amp panel. The 2 panels can just sit next to each other...
