Why not be upfront and ask the mobile service tech first if you could take away the summer wheels and replace them with winter wheels? Generally, mobile service techs are pretty nice guys and willing to work with the customer if the work at hand is not impeded.

Tesla Mobile Service tech just did this service on the Model 3 at my workplace. As he had to take all the wheels off, he offered to rotate them too. Great job, no issues, charge $175+tax.
