Perhaps it is possible that the team of computer scientists at Tesla working on one of the most difficult computer science problems in the world know more than we do about the logic behind having multiple versions in the wild at once. What we do know is that they could be looking at statistical behavioral differences through time as a result of changing one or more aspects of the software. Resorting to "I don't understand the black box, therefore RIDICULOUS!" seems premature.

Yes, I checked my Model S loaner with 17.50.1 and the release notes say that Easy Entry is activated when you connect/disconnect the seat belt.
A good question - I tried "Ho ho ho" to activate it (press and hold "T" at the top of the center display until it flashes briefly). No obvious change. I'm on 2017.50.1 however, not .2. I would have thought any eggs would have hatched in .50, not a minor update such as 50.2.

I'm on 50.2 - there's now a reindeer in the 'games' page when you touch the Tesla icon. Or apparently you can just voice command it, but haven't tried that.

Got 17.50.2 45 mins ago. Yep, hohoho is voice command or a manual Easter Egg (a reindeer toggles it) in the drawer with the rest of them. I bet it’s the first one with voice activation because the name is a well known phrase usually said out loud.

Press the Voice Command key and say HO HO HO.
And to remove Santa, press the Voice Command and say HO HO HO

Is the new Ho Ho Ho mode just for X’s or for S’s too? My S is stuck on .42 - VERY frustrating. My X updated to .52

It will happen for you eventually.
Looks like my non-AP non-P Model S does have the Easy Entry, but does not have Chill.
Even though I don't have a performance package, I might have used Chill mode just to save energy, similar to what the Leaf does for Eco Mode.
