Air conditioner use. Should I be turning off the AC and fan and radio when I exit the car to save battery?

Car will turn off automatically. Radio and infotainment shuts downs after you exit. If AC was used, car will automatically turn the fan on after you leave to dry out the evaporator coils or big smell will occur after a few months. You cannot disable this other than never use AC. And the only real killers of battery charge are Sentry and Cabin Overheat Protection. You need to decide if you want those running once you leave the car.

Cabin overhest protection can be configured to use the AC or not. If not then just the cabin fan comes on and pushes in outside air. Obviously the "or not" will cause less drain but will not be as effective.
