My car acts like it's 2001. I'm wondering if this is some sort of "Y2K" issue with the OS. I suppose it's also possible that Tesla reset the computer somehow during my last service. If anyone has logs from 2021 that they're willing to share, I'd like to take a look with my macOS app. Send me a private message if you have any recent data.

That's because the symptom does not appear until power is removed from the GPS sensor long enough for its internal battery to be depleted. That has sometimes happened the annual service, but not always.
There appear be other conditions that can cause the reset, too. In my case, the clock was fine for several days after the service before it got thwacked. Regardless, the fix is the same. I used Steve's cable, and had no trouble uploading the new code. The effect of the issue is mostly cosmetic (the clock), but also affects the time stamps in the car's log which could complicate troubleshooting down the road.
