My understanding is there are active efforts to decode what is available. Once decoded, these are sent to the developer who handles integration. But it looks like there are open, CAN bus options in 'Scan My Tesla' to help with the decode effort. I'm not part of that effort since the things I'm interested in are already there or the other metrics can be independently collected and integrated in the spreadsheet.
I'd recommend looking over the Owner's group threads and possibly contacting the members doing the heavy lifting.
I use Harry's Laptimer and TrackAddict, both at iPhone based, can record video from the phone and sync start/stop with an external cam like GoPro. I've MPP MoTec system as well, but I haven't had the time to get it correctly set up and learn how to use it.
The Tesla has to be in gear, "D" or "R", to see all of the "scan my tesla" data points specific to your version. So I recorded the "All" table to make this list for our SR+ Model 3:

A MacOS user, "AirDroid" is an excellent utility, $25/yr, that creates a Web server on the Android. You can quickly navigate to the folder holding your files and download them onto the Macintosh. It shows an IP address and port that becomes the URL to access the web server, for example http://192.168.0.12:8888. Once opened, it becomes trivial to get the files moved to the MacOS system.
