Firmware update and deep sleep

I presume it checks sometimes, like probably roughly once a day or something...when it's awake. It can check for updates on lte. It just won't download an update until you connect to wifi.
You can force a check to see if there's a new update for you by going in the settings, on the page that shows updates. Note that this only checks if an update is available for your car, it doesn't force getting an update if your car isn't due for one.

There is no "deep sleep", only catnaps. The car is awake anytime you're engaged with it or anytime you're using the app.
If it is notified of an update during one of these times it will notify you and download the software as soon as it has wifi, or eventually over cellular if it doesn't get wifi soon enough.

The server pings your car via cellular when an update is available, whether or not the car is sleeping. The car will then attempt to connect to WiFi to download the update, and after that happens you’ll be promoted to install it.

Only critical updates are downloaded via cellular. Others require WiFi.
