First details of starship's first orbital test flight!

You mean on the Superheavy booster? Composite overwrapped pressure vessels, for engine start-ups and other pneumatic needs. Middle metallic tube/pipe-box is hydraulic system for thrust vectoring control (and grid fins?).

How is it that we don't see any of those in F9 or any other booster?

Ariane 5 have a spherical helium tank at bottom of the rocket. Rocket Lab's have their COPVs inside the interstage. Falcon 9 have them inside of the LOX tank (famously).

Elon will be discussing the latest Starship developments tonight, 11/17/20. It's a virtual meeting, hosted jointly between the Space Studies Board and the Board on Physics and Astronomy. Elon's scheduled between 6:00 - 6:30pm EST, the last speaker on today's calendar.
Other than giving Tim Dodd a Boca Chica guided tour a few months ago, it's probably been well over a year since Elon has given us much new detail in a formal setting. Here's a link to tonight's YouTube livestream.

Test firing that beast must be exciting. If nothing else the hold down clamps, plus the floor of the booster that can withstand that level of pressure must also be exciting.
