How do I lock the car, walk away, but leave internal systems (i.e. HVAC) running?

Yeah I think via smartphone app is the best way right now.

Mercedes implements this with the "REST" button on the dash. It was designed to give the cabin some heat after the car was turned off (like waiting to pick up someone where you don't want to idle for an extended period. We have it on our Benzes and it's fantastic, I use it all the time, even if just for a little air circulation.

I really think this type of feature should be included in the future. E-mail ownership to let them know you want it!

I"m surprised the other trick hasn't been mentioned. I use it often...

Get out of the car, stick your foot back in and tap the brake. The car stays on (HVAC etc), but will turn off after a certain amount of time (30 minutes?).

just don't close the door all the way. get it to the first click not fully closed.. works for me.
