How to force navigation to use a certain highway?

If I use GPS to go on a long trip but I want to make sure the trip uses a certain highway, how do I force the trip route to use this highway?

Just drive on the route you wish to take and the Nav will eventually figure it out. There is no way to manually adjust the route.

It'll eventually figure it out but has the memory of a goldfish and it'll have to figure it out all over again next time

You can't do that in advance of starting your trip. As @jerry33 says, you can simply drive the road you want and ignore the car nav, however you better be careful and make sure there is adequate charging along the route you choose! When the car nav selects a route it looks for available Superchargers and optimizes your route for charging, not for the shortest path between your start point and your destination.
