I'm in love with the Roadster and hope to own one someday. Is there a complete list of all options, changes over the years, what Sport means, etc?

There's a search engine called TEG. It's better than GOOGLE. It's all-knowing about the Roadster.

In addition there's a couple of threads on the differences between versions. I don't remember any threads on options.

Yes, that wonderful search engine TEG started this thread a few years ago. I found it very valuable while researching my Roadster purchase 2 years ago:

Used Roadster shopping

As far as options, I think it's pretty much:

Sport vs. Non-Sport
Microfiber vs. Leather (there is also an executive leather option. I have it and I think it means I have some extra leather stitching around the VDS, as well as a leather dashboard and door sills). vs. Carbon Fiber Interior Upgrade
Crappy Stereo vs. Less Crappy Stereo
Standard Suspension vs. Adjustable Suspension
Cast Wheels vs. Forged Wheels (Silver or Black)
Crappy Headlights vs. Xenon Headlights
Solid Exterior paint vs. Carbon Fiber Exterior Kit

Here's a cut and paste from the Roadster page:

Three-spoke leather-wrapped sport steering wheelStandard
