255/35R19 would fit but would be an odd choice I think, smaller diameter than stock, and a little wide for the stock wheels.
I would go with 245/40R19. 235 vs 245 is a pretty minimal change, but to me the slight extra width and sidewall and diameter with 245/40R19 are all good things, and it will fit perfectly well. In general (not specific to this car) either 245 or 235 is a recommended width for 8.5" wide wheels (your wheels should be 19x8.5").
That said, foam-lined Tesla spec tires for Model 3 19" wheels will only come in the stock 235/40R19 size. If you want a Tesla-spec tire (e.g. T0, T1, etc depending how many revisions they've made), then you'll need to stay with 235/40R19 size, and that is perfectly fine!

get Tesla service to put the correct label on, they should fix it for free because that label itself is a factory defect, and it's a potential safety issue with incorrect load numbers!
