I was thinking about getting a couple of tire racks like you have in that first picture. Was wondering how hard it is to lift the wheel over your head to get the tires up there on the rack?

Not difficult at all. My rack is ~6-7 feet off the ground so I lift the tire up while on a stool or small ladder and rest it on the bar and then am able to reposition myself to put it in place. For $100 I love the storage rack.
