I used to have a "stealth" Model 3 Performance with the factory 18" wheels and small brakes which is truly one of the greatest cars ever made in my opinion, and I tested it out at an official NHRA drag strip on an open test and tune night a couple times. That car has been sold unfortunately, but my wife recently picked up a Model Y Performance with the standard 21" wheels. I wanted to order it with the 19" Gemini wheels, but you can only order it with the PUP / performance upgrade package as most of you likely know. I just bought a new set of 19" Gemini wheels to swap on to save some weight, rolling resistance, and increase the sidewall height - the stealthy factor is a bonus too.
In order to see if there was any appreciable performance difference, I took the stock Model Y to the same drag strip last night and did 4 runs all at street tire pressure with zero prep. It was of course extremely consistent with the slowest time being 11.97 (first run at 97% SOC) and the fastest at 11.903 (89% SOC) with trap speeds varying between 114.85 to 115.03 mph. 0-60 times were very consisent at 3.49 seconds with 1' rollout and 3.71 seconds without. My Model 3 Performance was doing 0-60 at 3.14 with 1' rollout and 3.36 without, so I would say these times were to be expected with the extra weight and taller shape. The ~0.3-0.4 second differential held true through the quarter mile where the Model 3 did 11.66 at 114.7mph vs 11.90 and 115.03mph for the Y.
