Music from USB—No Playlists?

Until I get around to putting my music on my phone, I've just copied the contents of the iTunes/Music folder on my Mac to a USB drive.

That works fine for playing songs, but there are no playlists or anything, just a list of artists and songs.

Is there a way to implement that?

Once I put the tunes on my phone, will playlists work?
