If I were to turned off sentry mode at home off and the alarm triggers will the cameras begin to record? Or will it only record if Sentry mode is turned on in this scenario ?

Sentry has nothing to do with recording or not- dashcam does.
The only video-related thing Sentry does is, if it goes to an alert state, it will try and move the last 10 minutes of existing dashcam video from the recent folder to the sentry folder.
Dashcam (if set up correctly) is always recording when the car is awake.
If sentry is on, the car is awake, so dashcam is recording.
If sentry is off, and you leave it parked, the car goes to sleep and dashcam stops recording.
Setting off the alarm would wake the car up and dashcam would be recording- but there'd be no "previous" footage from before the car woke up.
