I have a 2017 Model X with AP2.5 and MCU1. I am reading different places saying that it can record to a USB drive but I can't seem to get it to work. Has anyone else been able to get it to record with MCU1?

Yes ... I have an Oct 17 build Model X (AP2.5 - MCU1) and have Sentry Mode/TeslaCam recording.
Are you sure you have AP2.5? .. cars built before Aug 17 only have AP2
Did you prepare the USB correctly? Format to FAT32 ... create a folder called "TeslaCam"?
Don't rely on what Tesla reps are telling you, go to your car and look at the build date on the plate at the bottom of the B-pillar on the drivers side and let us know!
Usually the USB disk is the issue. First off Fat32 can be a challenge. Secondly get one that has high enough Write speed.
I have a Tesla X, November 2017 - it works there.
