The SRS, or Supplementary Restraint System badge you see on the inside of the A and maybe the B pillar and sometimes above the glove box, maybe in the seat - I'm assuming it's there to remind people who might work on cars that there's an explosive charge nearby, so take a little extra care when you work in this area. A bit like how some cars had 'Warning Disc Brakes stickers' on the rear bumper

Is it just me, or is this emblem missing on ALL Model Ys?

It's certainly missing on mine - maybe it's no longer required as the vast majority of cars now have airbags
 
Not sure and like you said maybe the labeling requirements have changed? I remember years ago when airbags first came out they required these obnoxious labels on the sun visors and those seem to have gone away over time too.
