I know generally about the 3 phase 4 pole engine and have a question:

    What controls speed?

Is it speed of phase, or amount of energy going in, or combination?

Very likely is Pulse Width Modulation (PWM). Higher the speed require higher the frequency to synchronize the rotation with the drive train. Wider the pulse width would give more power. You can google PWM to see how it works.
