I have a 2017 Model S with adjustable headrests and I can confirm that they are not adjustable when using FSD beta software. I have a sneaking suspicion that if you insisted on getting the adjustable headrest feature back they would have to remove you from the beta program because it's not in those builds. I think we're just going to have to wait until it gets put in to the beta branch. In the meantime we will just have to live with the headrest in its current position.
