Yeah, seems to be missing from Model S/X on refresh.
It is... it's a bit of a let down. I too use it all the time on the Model Y currently.
It can only be brought up with a voice command "Show energy" or just "Energy." For me it worked when I was running 2022.16.2, but went away when I upgraded to 2022.20.5. User facing bits of the software are a complete hot mess. Hopefully a big re-write is coming soon.
I just placed my order on 7/6/2022 - Model X Plaid, Silver, 20-inch rims, black interior, no FSD. I received a call a few days ago and was told that my pick update was set for 7/15 - 8/4. The rep predicted it would be July. I live in the Bay Area, California.

EDD moved from July 24-Aug 28 to July 27th-Aug17. As per the SA, a VIN seems imminent

I read somewhere on the refresh X thread that vins generally show up 3-5 days before delivery date and the Tesla system updates the EDD dates every Monday. My EDD range starts from July 27th-Aug 17th so I will cling onto hope until the weekend haha
I’m in the same boat. I have 7/26 - 8/16 Cleveland.

We're expecting a six-day train ride from California to Mesquite, Texas, and then, if haulers are available & willing, a short hop from Mesquite to San Antonio. Since we're in Texas, we have to submit payment up front. Tesla offered us a reasonable price for our 2021 MYLR, so we accepted the offer to trade.
We're still awaiting the $6,500 refund from the $41,500 Plaid pricing for being switched by Tesla from five to six seats, but we understand this usually happens only a day or so prior to delivery. We're keeping the spreadsheet updated.
I can't say enough good things about the San Antonio team—they treat us like valued customers. This will be the third Tesla they have facilitated for us, and they seem genuinely happy to see us when we walk in the showroom. They've always been pleasant, professional, helpful, and informative. I hope your experiences mimic ours.

Yeah other than cars getting loaded on to trucks, I'm not sure our external view of activity is all that reliable. Do we know what stage(s) of the pipeline we're actually seeing? And do we roughly know how deep the pipeline (in terms of days) is? Well cars have to go somewhere once they come...
