Weird Trip Mileage and Energy Readings

I've noticed some very odd mileage and Wh/mi readouts on my dash recently, with mileage numbers jumping up seemingly randomly and energy use numbers that diverge beyond explanation. If I fully charge, unplug, and start driving immediately, the "Since XX:XX AM" and "Since Last Charge" readouts should be identical (or at least close to it), no?

Here are some readouts from this morning, driving at roughly 70 MPH:

9:01 AM, Odometer 54,428:
Since 8:27 AM: 41.2 mi, 34 min, 302 Wh/mi
Since Last Charge: 35.4 mi, 9.7 kWh, 273 Wh/mi

9:02 AM, Odometer 54,430:
Since 8:27 AM: 41.2 mi, 35 min, 302 Wh/mi
Since Last Charge: 41.9 mi, 11.4 kWh, 273 Wh/mi

9:06 AM, Odometer 54,433:
Since 8:27 AM: 41.3 mi, 38 min, 302 Wh/mi
Since Last Charge: 41.9 mi, 11.4 kWh, 273 Wh/mi

9:09 AM, Odometer 54,438:
Since 8:27 AM: 45.9 mi, 42 min, 304 Wh/mi
Since Last Charge: 50.1 mi, 13.8 kWh, 276 Wh/mi

- Why is the "Since 8:27 AM" Wh/mi reading about 10% higher than "Since Last Charge"? My last charge was at 8:27 AM, so shouldn't they be the same? Which is more accurate?
- The odometer seems to be going up normally, so why aren't the distances provided on the dash going up at the same rate? I'd understand if there was just a lag in that the distance updated only once every X seconds, but sometimes the distance goes up 0.1 miles, other times it jumps up several miles in an instant. Sometimes the "Since Last Charge" is way ahead, other times its way behind. What is going on here?

I love the car (54,000 miles and going strong on a software-limited 40 kWh), but this just seems...weird...and makes me question other values displayed (e.g. range remaining).
