Coparts has quite a few totaled Teslas. What happens to the packs? Does Coparts remove the packs before the cars are crushed? Are all of the batteries recycled even if they are complete garbage? Say the car has been sitting for a very long time or a fire has consumed part of the pack

Most businesses aren’t in the business of crushing things that have value. Tesla battery packs, even wrecked ones, have significant value on the secondary market.

I don't know about CoParts, but there's at least one company, Redwood Materials, that "mines" old EV batteries for cobalt, etc.

Copart does not recycle or crush cars. They are a parking lot for insurance and others to park their cars on and run online auctions to sell them. They all leave the lot.
