Does anyone have any experience with this? On my previous car, I had it mounted behind the mirror, but that's not going to work for the Model Y because the cameras are there. Also, the instructions say it doesn't work with a non-metallic roof.

Yup that’s where I have mine and it works greatPage 173 of the manual has a picture and this text:
When attaching an RFID transponder (used by many
automated toll systems) inside Model Y, place the
transponder on the right side of the rear view mirror as
shown. This ensures best results and minimizes any
obstruction to your driving view.
NOTE: You can also attach a weather-proof transponder
to the front license plate.

Wow that looks nice. see Tesla came out and painted your wall. They did a nice job painting mineI used a leather case to hide it. And used plasti dip on the back of the ezpass. It is barely noticeable from outside.
I stuck/placed my transponder behind the screen.
This area did NOT work for me at several toll booths in NY (along 90).I just lay mine on the “neck” area behind the main computer screen. No ugly sticker on my windshield!
