The exact same thing could be said about the Model 3 LR. "Why does anyone need more acceleration than a Model 3 SR+?"

"Why do cars go faster than 80MPH in the US, since speed limits on almost all roads / highways, etc are either that speed, or slower?"

Funny, I thought the opposite after taking my Performance to the drag strip; that's it, that's as fast as it'll go; can't make it faster. One of the benefits of an ICE.

You are correct. Why do we need to accelerate our bodies to 60mph/100kph at ungodly speeds? Well…the thrill, the excitement for one thing

Have you tried the ABoost option or the Perf? Unless your not into roller coasters….always a more exciting driving experience imo.
