Watching the vid we see that they miss the aero covers, and they ran out if road. so the car is probably even faster than 216 mph.

Both. Mechanical in the sense that it only has two motors and thus needs lower gearing to get enough low speed torque. Electro magnetic in the sense that Model 3 has staggered rotor magnets to smoothen the start, which makes it harder for high speed torque. Plaid, having the luxury of three motors to smoothen the ride, has axially straight rows of magnets.
