I spoke to Octopus yesterday and asked about this as we have two electric cars. The answer was that it was fine, though only one be can be charged using the Octopus app. Our second car can be charged as normal and if we charge it overnight it will benefit from the reduced rate.

Don't give up yet! I was in a similar situation, tried to get a car allocated yesterday almost an exact match to my order but as the seats were white and my order was for black Tesla couldn't do it (I'd agreed to pay the extra but no!). I kept looking and a match popped up late this afternoon...
