For 19" wheels do I have to get 235/40? or can I go bigger?
For the winter, you want to go smaller in width (or the same). The idea is the narrower the tire, the more you can carve through the snow vs. plowing it out of the way of a wide tread.

Just be aware that you need to keep the appropriate XL load rating, tires fit only certain width rims, and the dimensions of the new tires need to be within 1-3% of the stock tire. If not, bad things can happen.
