AAA and Tesla for me were fairly close, I"ve been with AAA for years and have my homeowners with them as well. However, AAA doesn't offer lease-gap insurance in California, which I definitely want, so I went with the Tesla insurance.

Everyone getting a long-range, at least in California, seems to be getting the new console, so order away. You can confirm when they match your VIN if it has the new console and can reject the delivery if not and wait for a new build. No reason to wait, really.
