Are contacts, calendar, sms retained after sync turned off? Calendar selection?

With contacts, calendar, sms sync enabled, then later disabled, will the car retain the synced information?

That is, once sync is disabled, when someone in my contact list calls, will the car still show their name, or just their phone number? Also, are calendar and sms items stored in the car even after sync is disabled? If the car does retain the information, is there a way to wipe it?

Another question regarding calendar: I know in the past one could not select the calendar to sync (google calendar) so all the calendar entries are synced. I read some posts that suggested that it was fixed, then broken again. What is the current state of calendar sync? Can one specify which calendar to sync, or is it all or nothing?
