I go up from Charlotte, NC, frequently to hike in the mountains, and there are currently no convenient superchargers outside the three locations around Asheville. (Tesla has been trying to find a spot in Boone, but that effort seems to be cursed.)

There are a fair number of Level 2 chargers at various places around the N.C. mountains, often at visitor centers, breweries, and places to eat. Check out PlugShare.

If you want to start in Cherokee, you may want to consider charging at the supercharger in Pigeon Forge, and then taking US 441 through Great Smokey Mountains National Park to Cherokee. From there, you can hop to various Level 2 chargers as needed, stop in Asheville to supercharger, and plan to end up in Boone for Level 2 charging to get home.

I'd drive from Cherokee to Asheville, charge at the new Biltmore Village supercharger, and then continue on the BRP all the way up to the VA line and then go to the Mt. Airy supercharger. That stretch from supercharger to supercharger is 200 miles, but travelling on the BRP, even with the big elevation changes, you tend to use close to rated range in the summer due to the low speeds. You can also plan a stop in Boone and go to Makoto's for a meal as they have multiple EV chargers there.
