I'm currently running the stock 275/35/21 tires in the rear, and 255/35/21 in the front. I know many people in the forum mount the rear tires into the front and purchase 295/35/21 for the rear. This helps protect the wheels from curb rash better, and potentially better ride. However, what is the efficiency impact of doing this? With my driving habits, I am getting around 280s Wh/mi with the stock 21" Uberturbines.

I can still get 260 to 280 Wh/mi with that setup, but have to drive efficiently. Usually it's closer to 300 Wh/mi though.
