I had my rims powder coated and calipers painted on my model 3 and did not need to recalibrate. Had is done at Rim Pros in Sac (long drive for you), but they did exceptional work.
What are the pros/cons of wrapping vs painting the calipers? If I just want the boring Tesla red to match Performance Y, the extra color choices from wrapping doesn't really matter.

Besides the many color options, it’s better to wrap and keep the original look under it. In case you later decide yo change color, remove the wrap and do it again. Not that easy once painted. Besides, cost-wise, they are probably the same.
Check craigslist. I found a guy down here in LA who came out to my house and painted my calipers (and repaired one rim) for about half the cost of the cheapest shop I could find.
