Would 21x10 rims fit on the front and back of an S? Found a deal on a non-staggered aftermarket setup but not really sure if it would fit.

Agreed. They probably wouldn’t even be able to be mounted much less rub. Depending on the offset, you’re either going to hit the upper control arm or if you went with a high enough offset to avoid that, you won’t have enough stud length to properly tighten the lug nuts down, which would necessitate getting longer studs.
What are the exact specs of the fronts you’re considering?
