I could fit more panels for sure but this setup even with the single inverter projects to meet 111% of my energy requirements and I'll also be getting 2 powerwalls. Not sure if I'll be in this house for 20 years...it's a possibility but not a certainty. Maybe the single inverter is the way to go.

+1 for tux mats. I have them in my 2017 and they've been fantastic. Easy to get in and out, the best coverage, and they look great.

That's pretty much what I did. I like to keep my cord with swappable plugs in the car for emergency charging while I keep one of these plugged in permanently. Less wear and tear on the outlet and plug if you never unplug it.

Spot on. The gen 2 cable with detachable adapters is limited to 32 amps, but this one with the fixed plug is also thicker gauge and can charge at 40 amps.

This is what I wanted to do, too. I have the gen 3 handles, but the paddle gear is still weak and I wanted to have 3 here at the garage for when the others inevitably break.

Unfortunately the paddle gear they sell is the same weak casting that is prone to breaking vs. the nice machined stainless steel one evtuning used to sell.
