Once your infant outgrows their infant car seat, I'd recommend a narrow width convertible seat like the Diono Radian 3RXT. If you mount it in the center seat using seat belts, then you can still seat two adults on the sides. Mounting with seat belts isn't as secure as latch (shifts several inches side to side), so I also attach the rear tether to the front seat rail. With the Diono, you'd probably also need the optional angle adjuster foam block to prevent the car seat from touching the front seats.
