The AC is probably running already anyway to cool the battery so I don't think you'll add much power draw. In theory you might prevent the battery from cooling properly but I think the car's software will prioritize battery cooling anyway so you might not get that much AC in the cabin Let's see if someone with actual track experience can chime in.
AC measurably heats the battery since its throwing cabin heat into the same cooling loop. Power draw is less important. Use fan and turn off ac on the track.

Dont have exact data and it depends on how fast you are. On a hot day it can throw few kw of heat there while motors and batteries lose ~%5 of average power as a heat. So its like 10-20% added heat roughly. Cant be worth it.
