For those that have tracked their car, did you feel you needed something other than the stock tow hook (under the front trunk mat)? If so, why and which one

The front was "sufficient", and thankfully I didn't need it. A rear hook point would be nice though.

Stock tow hook should be fine. There are cooler looking aftermarket ones, but I've seen cheap aftermarket examples break. M3 owners manual indicates the stock tow hook is to be used for winching onto a flatbed truck, which is what would happen at a track.

Don't use it for actual towing, but hauling onto a flatbed, or dragging you out of some sand should be OK.

A stock tow hook is included with our car? are we talking about the mounting point, or the actual eyeball tow hook?

yes eyeball hook should be in frunk. If you have earlier revision frunk with mat installed it will be under the mat.
