The limitations of using USB devices to listen to music in the Model 3 seem odd to me, and if they fix it, fine.
But In the meantime, I've found a better way.
I've already got a PLEX server running, and besides TV and Movies, it'll serve up everything I've got in iTunes.
I open the PLEX iOS app, select plugins > itunes > playlists, pick one, and hit shuffle.
The car plays my music via bluetooth, stops when I get out, picks up where we left off when I get back in.
Setting up the server to work over the internet does require some fussing with the router, but it's worth it!
Going on a 1400 mile trip soon, it'll be a good test of this system.
