For the E-Golf they're using LG cells. LG has recently said they're able to supply packs of up to 120kWh (at unspecified annual quantity and price).
Agree that they're just spitballing targets at the moment though.

The likely NMC chemistry they are using in upcoming 2017-2018 projects will be around 235 Wh/kg. That's 510 kg just for the 120kWh of cells without any additional structure. Add about a minimum of 35% of additional structure, assuming no real cooling or heating, that's about 690 kg, or over 1,500 lbs. A more realistic 60% addition would be 816 kg, or almost 1,800 lbs for the battery pack. They can claim 120 kWh all they want, but few light passenger vehicles can take a 1,800 lb battery pack and be roadworthy.

For reference, the Model S 85 original battery pack is 544 kg, or 1,200 lbs.
