Can I place a second order and just take whichever one comes first?

What do you have to lose? $100 order fee?

I’m worried they will discontinue producing my current configuration (performance WITHOUT PUP) and I will be sitting here waiting for a VIN 6 months later..... Considering a new order with the new options just to be safe. Thoughts?

I did this, and they even refunded my other order’s $100 fee

Yep, most you would lose is the $100.
