Yes, they do turn off after you close the doors.

If you accidentally leave the doors open, the car will time out to shut down the accessories.

Check the fridge light too. I think it turns on the light again after the door is fully closed.

If you think you car is staying on all night, there is a problem with the seat sensor or a door sensor.

You'll get a notification on the Tesla app if you leave the doors open. Also will get a notification if the HVAC is left on too long as well.
