Delivery timing question

So I got my VIN on the 20th of May. My delivery date as of now is June6-9.
My question is this
How far out from now can I expect to be able to schedule my pickup and finish the paperwork? I need to arrange my time off from work as others depend on me being there for them.

Not that simple, my car was built 15th May, I was asked to take delivery in the 29th May. I called them and was told car had not arrived so moved delivery to the 2nd June. Spoke with SA yesterday who said it might not arrive till the 3rd June but left my date the same. To be frank I don't think they really have a clue. Also there is still the potential that the charger port ECU is missing when it arrives,, they say they don't know if it is or it isn't. So might get delayed again. Not really that hard they should log cars out complete or not on the work sheet. The tracking if the delivery is no different to a parcel from Amazon. It's not rocket science.
