I saw a video of the MX that shows how the doors have sensors that stop when it gets too close to the exterior objects. Does the MS have this too?

Can you open the car doors from the center console by pressing a button?

No, Model S has manual doors all around. Only the trunk opens with power if the car is equipped. It however does not have sensors to stop it from hitting something. The motor however does notice immediately if it does hit something and stops opening at that point.

On the Model S, only the door handles are automatic in that they auto present themselves as you approach the vehicle and retract as you walk away from the vehicle.

I would assume the auto open door feature will make it's way to the Model S sometime in the reasonably near future thought. But as of today, the Model S just has plan ole' manual doors.

On models with the electric trunk open, you can set the height for it to open to less than the max, and it will remember.

That is true but I think @luvnMyTS's point is that the rear hatch has no sensors to automatically stop it before hitting an obstruction, like the Falcon Wings have.
I expect that in a year or two the S rear hatch and doors will have sensors built into them like the X does.
