Scheduled departure and weekday off peak option

We've been using scheduled departure with success during the work week. While we don't have off peak rates, we set the off peak option to end at the same time as the scheduled departure of 8:15am for the M-F morning commute.

However, on weekends we don't have a normal departure schedule and would prefer to plug in and charge when needed instead. When we have the off peak rate option set to 'all week', the car would default to scheduled departure after plugging in and then we'd manually start the charging cycle from the app or car screen. Not a big deal to have one more step, but we wanted to give the 'weekdays' off peak rate option at try so we made the change.

At first the 'weekdays' option seemed to be working well for our situation as plugging in M-Th was the same and on Friday after work through the weekend it will charge right away when plugged in. However, the process for plugging in for Monday morning is tricky.

Plugging in on a Sunday, as expected the car will start charging right away since it's not a weekday. If we stop the charging cycle from the app or car and leave plugged in the car will then show scheduled departure for Monday 8:15am. The problem is we have found that the car will start charging on it's own at some point later on Sunday night - not sure exactly when or why but we've found it started charging again seemingly on its own. So we either have to wait until after midnight or get up early on Monday to plug in for scheduled departure to work for Monday morning.

Has anyone experimented with the 'weekdays' option versus the 'all week'?

Not sure if we are missing a setting or a step to this. If this is normal, then we may switch back to the 'all week' off peak option to avoid the car restarting charging on Sunday evenings even after we stop it.
