Winter tires would help in the colder conditions. All season are not good at anything to be honest. Wi get tire with the wipes and softer compound would definitely assist better in ice and snow. Far as gravel is concerned, noting will help but dig feeling into the loose dirt due to the excess weight, maybe wider tires would help. But it not everyday to drive on gravel and who want paint chips from their soft paint anyway.
 
Tesla uses the same paint and coatings as everyone else. It's not any softer or harder than BMW, Mercedes, or Ford. All automakers have been using the same paint and paint systems for 20+ years now. It was an issue 30 years ago when the first low-VOC formulations were done - but the techniques and formulations changed to make them better. That said, no automotive paints can hold up to being sprayed with gravel - even old VOC paints.
