Yellowish Video

Seems like the front and side cameras always record with a yellowish hue, while the rear camera is perfect. Anyone know why?

I believe they don't do any extra color correction or processing to the cameras that aren't meant for regular viewing. It's extra processing that doesn't help its function.

Rear camera is by law primarily a backup camera for human use that is additionally used by the FSD.

The other cameras are FSD first and likely filter out or are less sensitive to blue (shorter wave length/higher energy) to be better at seeing details important to FSD.

I don't believe that's true. I think it's more about memory and processing power because Sentry/Dash camera video was an afterthought.
