Does a 12v jump starter (pic) simply provide enough juice to open doors, etc if regular 12v dies or can you drive the car with the 12v jump starter attached in lieu of regular 12v?

Once the jump starter provides enough juice to close the contactor to connect the HV battery, the car should continue to run even if the jump unit is disconnected.
Unless there is a dead short in the 12v or something else wrong with the car.
If the 12V battery is dead you cannot open the Frunk or doors. You have to first open the frunk (look up a YouTube “how-to” video for you car model.) Once the frunk is open you use the jumper to apply power to the low voltage system. You can then open the door and “start” the car (step on the brake.) This will close the contractor and the HV battery will now power the car, as was noted by @brkaus. Then you remove the jumper and close the frunk.
At this point I would turn on Sentry and remove all exclusions to prevent the car from going to sleep (so you do not have to repeat the procedure above.) Then solve the battery issue.
