The biggest difference will be in the mid-2019+ group due to the introduction of the Raven platform (different motor setup, adaptive suspension, more range, etc...).
Basically:
2017 - early 2018 - MCU1 / AP 2.5
March 2018 - MCU2 / AP 2.5
Late 2018 - phased out sunroof and rear-facing seats
July 2019 - Raven / AP 3.0
Feb 2020 - Long Range +, Cheetah stance, different front seats (I think)

I have a 2016 P100D with AP3.0
I would rather have a [Demo] or new 2021 Model S Performance for ~$90k rather than a 2016/2017 Model S P100D for ~$70k. 4/5 years newer car, many huge, and small improvements.
