Any other owners experience this in their app? Any indication of movement? I was not previously able to “Go to Account” with the blue bar in the picture. I’ve only ever been able to “manage” the reservation with the small cogwheel.

Indication of movement, I don't think so.

My app has always looked like that for my reservation.

Does anyone know how Insurance works? It says I need to upload proof of insurance - but how do I know what effective date to set my insurance for if I don't have an actual delivery date yet?

Yes I just did it. I just told my agent to make it a few days before delivery date. He/she will need your VIN and an effective date. You can either wait until you have an exact date or just pick a day your comfortable with. Takes them 15 minutes to set it up and send you a card to upload

They said the shipment was delayed due to inclement weather. Hoping it doesn’t push again.

Yeah, same happened to me once I took off the hold. I suspect while you are on hold they have a temporary VIN assigned (maybe a VIN for each day) anyways and quickly match it to you if you release the hold.
